Unpasteurized Raw Honey
250g (8.8 oz) fresh, soft-set raw honey from clover, alfalfa and other Northern prairie flowers. As beekeepers first, we sell the majority of our honey in bulk at premium prices to other honey packagers. We reserve our best honey for our Wendell Estate Honey jars. Unlike almost any other honey you’ll find on store shelves, including other “raw honeys”, our unpasteurized raw honey never sees the inside of a bulk drum: it goes directly to our canning line after being spun from the honeycombs, usually the day after it’s harvested from our beehives. This is important for two reasons: One is that raw honey deteriorates in flavour and health benefits with age at ambient temperatures. The other is that getting honey from a bulk drum to a retail package almost invariably requires heating the honey, no matter what the label says.

We ship our unpasteurized raw honey with Canada Post (partnered with USPS for USA deliveries), the only reliable logistical providers from our rural location. Please allow up to 7 business days for delivery in Canada and up to 14 business days for deliveries to USA addresses in normal times. We have no control over the postal system (or customs for USA deliveries) so cannot influence delivery times. If your honey does not arrive within the above quoted times, please contact us and we’ll do everything we can to get you your honey. Fortunately, delivery often occurs much quicker than the times quoted above, often in 4 to 10 calendar days.

Mainly just the amount of honey in the jar. Like every jar we package, each 250g (8.8oz) jar of Wendell Estate Honey raw unfiltered honey contains the finest honey our bees produce in the season. We don’t process, blend or batch the honey. We simply spin it from the honeycombs, strain out larger pieces of wax and package it directly into the jar, typically within a day of harvesting from the beehives. Somebody with very acute senses of taste and smell may notice minor differences between any 2 jars of Wendell Estate Honey since honey packaged on each day comes from a different apiary. However, we assure you that each jar of raw unfiltered honey meets our highest quality standards.
250 grams, or 8.8 ounces is 12 one-tablespoon (21g) servings of raw unfiltered honey. It’s enough to find out if you enjoy our honey as much as we do. It’s also a good size if you eat honey only as an occasional treat.
There are almost countless ways to enjoy honey. Sweetening tea and other drinks being one of the most common. Our raw unpasteurized honey is especially suited for spreading on toast, eating with cheese or fruits like apples, or along with unsweetened chocolate. Tim likes to eat it straight off the spoon. My grandmother used to add raw unpasteurized honey to canned garden tomatoes (much more delicious than it sounds!). One of the unique properties of raw honey is its remarkable resistance to spoilage at ambient temperatures. However, raw unpasteurized honey will maintain its complex flavor profile and health benefits longer if stored cold for long term (greater than 2-3 months) storage. Soft-set honey like ours does get quite hard at cold temperatures, so we recommend keeping an amount that you will consume in less than about three months at room temperature.
